NOTE: All of our premium Arabica coffees are roasted to City+ to Full City roasts, showing minimal-to-no surface oils….we want all of the flavor to stay in the beans until the coffee is ground! Despite the additional descriptors, the first flavor and aroma you'll think of is "COFFEE".

Ethiopia! As always, when it rains, it pours, and as crops are arriving in the US there are many fine options in both natural (dried-in-the-fruit)and washed process. As we said goodbye to the Hadeso and Gorgora we ushered in the excellent Kayon Mtn. natural process, presented herein as a pourover option. Dessert in a cup! Kayon Mountain Coffee Farms PLC is a relatively new (ca. 2012) enterprise which is big enough to do direct export (ca. roughly 2015), taking advantage of the loosened strictures of the Ethiopia Coffee Exchange (ECX). Managed by an experienced producer and trader, Ismael Hassen Aredo. Edema, this farm is vertically integrated and does its own milling. The coffee comes from Shakiso Woreda, Guji Region, and is produced at a very high 1900-2100 meters. The light-medium roast evinces sweetness, berry/compote and chocolate notes. Roasters have had a field day with this coffee, taking home Good Food Awards for both the natural and washed offerings of Kayon Mountain Farms.

We often take in tiny lots for assay here in the "lab", and like mad scientists put them through the paces for unusual notes they might yield. "After we switched to Badbeard, no one in our office can abide any other coffee. We are currently finishing off a recent roast of Mexican Terruño Nayarita, certified organic, sustainably harvested coffee from El Malinal, on the slopes of Cerro San Juan. Badbeard's roasting profile brings out a full, rich flavor, laced with citrus notes, chocolate, cinnamon, vanilla, and birch bark. Spices, grilled meat, and a hint of a tobacco note round out the finish. This is a coffee that rewards the taster every time. "
