When it comes to Ethiopia , we LOVE our natural process coffees. A LOT. They represent the original terroir, the mothership mokha. Skillfully “untouched”…only ripe cherry picked and sorted, dried whole in the sun on raised beds…processed at a dry mill in Addis Ababa…shipped here…roasted light-medium. We just GET OUT OF THE WAY and let the beans do the talkin'. This current fave Gedeo Zone Yirgacheffe Grade 1 natural, grown super-high between 1900-2200 meters, from the Chelbesa Mill. Sweet, juicy fruit, big body. LOVE. Peach, strawberry, galangal notes. Gotta try it in your pourover.

Rossalina is our small-batch roaster capable of roasting samples down to a half-pound with exquisite control. The hallmark of great coffee is consistent roast temperatures and even air flow, and Rossalina delivers on both counts.
