NOTE: All of our premium Arabica coffees are roasted to City+ to Full City roasts, showing minimal-to-no surface oils….we want all of the flavor to stay in the beans until the coffee is ground! Despite the additional descriptors, the first flavor and aroma you'll think of is "COFFEE".

Ethiopia Yirgacheffe Natural Process Tsigue Jigso

Yirgacheffe is arguably the most recognized word in the Ethiopian coffee world, and the variety of world-class washed and natural process coffees is without peer. We have offered many dozens of different producers since Badbeard's started up in 2006, and are fortunate to partner with importers who embrace the need for sourcing transparency and excellence in the cup.
This wonderful microlot natural process is directly traded by producer Tsigue Jigso Oda from her small (9 hectare) family farm in Kochere which she runs with her immediate and extended family. Only ripe cherries are selected and then dried for 2 weeks on raised beds. Milling is done in nearby Chelelektu (whence our previous Yirg natural. now out of stock) before being schlepped for export to capital Addis Ababa. A very fine, sweet cup, with prominent notes of chocolate, berries and nutmeats, seductive aromatics. Best in pourover.

"...this morning I arose early to grind, press, and sample the El Salvadoran Women's Brew. Wow, what an aromatic and delicious treat! I first noticed a lack of offensive acidity (which is why I did not drink coffee for years), a delicacy and round impression on the palate, wonderful fruitiness, and complex flavors. This coffee reminded me of feminine-style red wines, with understated elegance, finesse, and polish. Some coffees are more about the flavor of roasting, almost a charcoal taste, but this was much more subtle and appealing to me. Tomorrow I will try the Ethiopian selection and let you know what I think. You are definitely on to something special with your coffees. "
