NOTE: All of our premium Arabica coffees are roasted to City+ to Full City roasts, showing minimal-to-no surface oils….we want all of the flavor to stay in the beans until the coffee is ground! Despite the additional descriptors, the first flavor and aroma you'll think of is "COFFEE".

Ethiopia Yirgacheffe Dumerso Grade 1

There seems to be a glut of excellent Ethiopian Gedeo Zone washed coffees around these days and we cherry-picked an old favorite, Yirgacheffe Dumerso Grade 1. The Dumerso mill is owned by Surafel Birhanu and his family and this coffee represents many smallholder, heirloom varietal farms in the area of the mill proper. The farmers deliver ripe red cherry to the mill where it is sorted, pulped, and fermented for 36-48 hours. After the final washing it goes to raised African drying beds, where it gets turned every two-three hours during the first two days of drying in the hot sun. After a total of 10-12 days total dry time, having reached a moisture level of 11.5%, it gets bagged and shipped to Addis Ababa for final milling and shipping.
We noticed and particularly liked the notes of toasted coconut and peach in this Yirgacheffe in pourover, using a Hario V60. It is also chocolately, sweet and floral, some lavender tones popping out. A very fine coffee!

Serving up Badbeards Coffee at Buzz:Killer Espresso
How to catch a Badbeard buzz at Buzz Killer Espresso in Chicago.
"...this morning I arose early to grind, press, and sample the El Salvadoran Women's Brew. Wow, what an aromatic and delicious treat! I first noticed a lack of offensive acidity (which is why I did not drink coffee for years), a delicacy and round impression on the palate, wonderful fruitiness, and complex flavors. This coffee reminded me of feminine-style red wines, with understated elegance, finesse, and polish. Some coffees are more about the flavor of roasting, almost a charcoal taste, but this was much more subtle and appealing to me. Tomorrow I will try the Ethiopian selection and let you know what I think. You are definitely on to something special with your coffees. "
