NOTE: All of our premium Arabica coffees are roasted to City+ to Full City roasts, showing minimal-to-no surface oils….we want all of the flavor to stay in the beans until the coffee is ground! Despite the additional descriptors, the first flavor and aroma you'll think of is "COFFEE".

Ethiopia! As always, when it rains, it pours, and as 2020 harvest is slowly arriving in the US there are many fine options in both natural
(dried-in-the-fruit)and washed process. The viral scourge has directly hit the coffee industry and for a lot of reasons East African coffees
have been delayed by months, and we are lucky to have this fine certified Organic, washed-process-dessert-in-a-cup from Kayon Mountain Coffee Farms PLC is a relatively new (ca. 2012) enterprise which is big enough to do direct export (ca. roughly 2015), taking advantage of the loosened strictures of the Ethiopia Coffee Exchange (ECX). Managed by an experienced producer and trader, Ismael Hassen Aredo. Edema, this farm is vertically integrated and does its own milling.
Grown at 1900-2200 meters, this "double-washed" coffee, ripe cherry is depulped, fermented, washed and then soaked in clean water before drying on raised beds in the sun. Superb preparation is evinced in the cup; our light-medium roast evinces sweetness, blueberry/compote and chocolate notes. Roasters have had a field day with this coffee, taking home recent Good Food Awards for both the natural (which we had last year and hope to have again when it's available) and washed offerings of Kayon Mountain Farms. Awesome pourover and drip!

Business partner/roaster/barista extraordinaire Andrea Spella has the best espresso in Portland. When we acquired "Rossalina" we knew we were in for an extraordinary ride together.
"I just now finished a cup, no pot, of that wonderful coffee you sent me. First of all wanted to thank you very much for doing that. I am honored you value my opinion. But then again I have ben interested in coffee at an early age. I was a regular at McNulty's in the Village. I think the last time I can remember getting excited about a coffee bean was tasting coffee from China. But this one even more so. I wish I could tell others of my find but not many people I know are "into" coffee like I am. So I report back to you now. The first sip was so much like the tasting of a fine wine. You know that the next taste would only be better and from there you savor every swallow. So in ending this letter I did not like it. I loved it!!!"
