We have in the past been big fans of the native Mundo Novo varietal as a single origin espresso and as a base for our Mondocello, and this coffee, grown at (relatively high for Brazil) 1150 meters. It is processed using the pulped natural method wherein the ripe cherry is partially disk-pulped and then dried in the sun on raised beds, which bring along both fruity and sweet base notes to the medium-roasted coffee. Nutty and chocolatey, it also evinces good malic acid traits like green apple and Concord Grape.
