Finca Santa Sofia was started back in 1991 by Pablo Ferrigno, a third-generation coffee farmer. The farm is situated in the lush mountains of Alta Verapaz, Cobán, about 250 kilometers north of Guatemala City. The region is renowned for its persistent rainfall, a.k.a “chipichipi”, which reminds me of my many years in Central Mexico and the seemingly endless rainy season. Coming from elevations around 1800 meters, the washed and patio-dried caturra, catuai and typical varietals made for a bright coffee with heavy citrus notes, not along the lines of our Kenya AA but more subtle, lemongrassy, berryish, pineapple-y and nutty too. This coffee evinces more chocolatey notes in a darker roast profile and we will offer it both ways…please specify in the notes section when you order!
