NOTE: All of our premium Arabica coffees are roasted to City+ to Full City roasts, showing minimal-to-no surface oils….we want all of the flavor to stay in the beans until the coffee is ground! Despite the additional descriptors, the first flavor and aroma you'll think of is "COFFEE".

The relatively new Democratic Republic of Timor-Leste, formerly known as East Timor, sits at the far eastern end of the Indonesian archipelago, and less than 700 miles from Northern Australia. It has had a long and turbulent history between many colonizations and occupations, and while stable economically has been especially, given its geographic isolation, quite challenged thru
the Covid pandemic. Smallholder coffee farmers also face vast agrarian vulnerabilities like arid weather, a short rainy season, poor soil, and negligible access to fertilizers and pesticides. Shrubs under such conditions are very low-yielding (averaging 2-3 kg. of cherry per tree). But not all is bleak: in recent years, through governmental and NGO support and significant
investment in infrastructure, the coffee sector has become a bright spot with continued efforts will present some of the most interesting and reliable sources in Indonesia.
The Kailitlau Mountain area within landlocked Ermera municipality is clustered with farms mostly belonging to the ethnic Dukurai peoples and coffee is a visible and important crop. Four farmer groups (Lekisala, Taurema, Hatlala and Loiludo),
representing a total of 73 households, were responsible for this individual high elevation coffee lot, which is from fully washed process
after a prolonged, 36-hour fermentation stage.
It is a lovely, clean cup with a range of fruit and earthy notes associated with washed coffees from Indonesian powerhouses
like Java and Papua New Guinea. It handles darker roast profiles quite well and is a nuanced single origin espresso.

The infamous coffee-bean cleaning-machine Jacu bird from the Amazon
If your coffee tastes like s--t, don't blame the Jacu bird! This infamous Amazon bean-machine beak-selects each coffee berry at the peak of ripeness and leaves just the beans, somewhat clean and green, behind...so to speak.
"Just want to say thank you for the sample of the Java Taman Dadar. Wow, this is an amazing coffee!! The coffee is so smooth and mellow without any hints of bitterness at all. I enjoy the woodsy smokie notes that linger. It is now one of my favorites, I can see myself including a lb with every order. The EL Salvador -- Santa Leticia Estate is another great coffee it has these great grassy notes that accentuate the overall body of the coffee. I also got a lb of decafe and its is amazing how your decafe taste like regular. Thank you for your generous samples and the great coffee"
