We are happy to present a Royal Select Mountain Water process decaf from one of our favorite Papua New Guinea estates, Sigri Plantation, whose caffeinated coffees we have offered in the past. Fruit notes are notable on the front end and in the finish, and the ground fragrance is rich. What follows come from Royal Coffee's bean bio for the Estate…
“Because of an ideal growing environment and intense quality control, Sigri plantation, established in the 1950's, produces some of the finest Arabica coffee in Papua New Guinea. Cherry coffee is hand-picked and carefully checked for uniformity & ripeness in the field, and then pulped on the same day. The fermentation process takes place over the next three days. However, unlike most other coffees, the Sigri process finishes with total immersion in water for another day. Sun drying further enhances the coffee and, unlike many others, all Sigri coffee is 100% sun dried. Careful conditioning, hulling, grading, and hand sorting are the next steps. A final hand sort before packing, produces the finest green bean for which Sigri is renowned. All plantings are exclusively Arabica, concentrating on the Arusha and Typica varieties, which produce a finer coffee than others in Papua New Guinea. Carpenters has always been an advocate of shade coffee, not only from an agronomic point of view, but also because shade encourages fauna which assists in pest control and has environmental advantages. At Sigri, strict rules on fauna protection create a sanctuary for many threatened species."

"Yirgachefe Harfusa Inkoop? OK, I admit, half the fun of this coffee is the name. I am infatuated with all those exotic vowels. I tried to convince the kids that we should name our new kitten "Yirgachefe Harfusa Inkoop" but they want to call him Tommy. Sigh. Delicious! Full, chocolately entry to the palate but not monolithic, shot through and enlivened with green grass, smoke, and cherries. A very round texture, and clean finish. "
