Mexico is all about community and I'm very happy to be part of the "extended family" roasting this excellent offering from the Chiapas producer group Enjambre Cafetalero. 172 smallholder farmers in the region Amatenango de la Frontera (which hugs the border with Guatemala), have successfully paired their fortunes with progressive financing and logistical organizations like Impacto Transformador and Sinapsis. Now typical in Chiapas, individual farms or small groupings have their own micro-mills to prepare their harvested cherry and get it to parchment stage, which is afterwards brought to a centrally-located dry mill and prepared for export. This is very rugged, mountainous terrain, steeply sloped, and producing coffee here is exceedingly difficult. That is has been produced with organic certification is impressive enough given the obstacles and the still-lingering impacts of the 2012 coffee leaf rust plague which wreaked havoc throughout Central and South America.
Varietals herein are Bourbon, Catuai, Caturra, Pacamara and Typica, grown between 100-1800 meters, fully washed process and sun-dried.
Even in our standard light-medium roast profile, don't expect a light-bodied coffee here...it has a big presence, very chocolatey, and stone fruit-centered. Has such nice cocoa notes in a darker roast that I am offering it as a stand-alone espresso as well as using it in Gary's Rx Espresso.
