NOTE: All of our premium Arabica coffees are roasted to City+ to Full City roasts, showing minimal-to-no surface oils….we want all of the flavor to stay in the beans until the coffee is ground! Despite the additional descriptors, the first flavor and aroma you'll think of is "COFFEE".

This coffee comes from smallholder farmers located in the town of Chimhucum high in the Los Altos mountains of Chiapas. Chimhucum, meaning “Two Rivers” in the local Tzotzil language, as a micro-climate is characterized by a wet and cold climate for much of the year.
Growers here in Chimhucum take great care to respect the land. Coffee is shade-grown and
sustainable practices such as composting and water treatment are employed. Comprising varietals
Caturra, Catuai and Sarchimor, farmers are growing at an average of 1750 meters. The farmers here pay equal attention to processing. In this lot, Sarchimor, Caturra, and Catuai varietals were hand-depulped and processed using the semi-washed or "miel" method.
During this process the producers fermented the coffees for between 6 – 12 hours resulting
in exceptional fruit sweetness and medium-bright acidity. We get candied orange peel, chocolate
in the aroma and the body is silky and buttery.

looking for waldos
Badbeard checks for Waldos.
"Just had my first cup of the Terruńo Nayarita Natural you were kind enough to send me, for which, thanks. What lovely stuff! Nicely rounded body with a smooth top, and a bottom that lays gently on the tongue. The overall balance is beautiful. The flavor of this stuff is, I think, too delicate to go into a blend without losing its essential character, and should, in my opinion, be offered only as a straight single origin. In short, it was well worth [the] wait."
