NOTE: All of our premium Arabica coffees are roasted to City+ to Full City roasts, showing minimal-to-no surface oils….we want all of the flavor to stay in the beans until the coffee is ground! Despite the additional descriptors, the first flavor and aroma you'll think of is "COFFEE".

A timely arrival of one of our favorite African coffees. One of the largest collectives on the African Continent, the Yirgacheffe Coffee Farmers Cooperative Union offers classic cup profiles in both washed and unwashed heirloom varietals. Notes of citrus, baker's chocolate and bergamot prevail in this washed, high-(between 1900 and 2200 meters) and shade-grown arabica.
Some interesting notes on the YCFCU follow from its website...
"Yirgacheffe Coffee Farmers Cooperative Union (YCFCU) was formed in 2002 as an association
of 22 local cooperatives, who had formerly sold exclusively to local coffee boards. Located in
Gedeo, southern Ethiopia, the co-op utilizes over 56,000 hectares in one of the most famous
growing regions of the country. After 17 years in a socialist oriented coffee business, the
cooperatives reorganized as the economy liberalized in 1993. Since their establishment,
most cooperatives have been engaged in coffee production and supply to the local market.
Only YCFCU was given special permission to bypass the Ethiopian Coffee and Tea Authority
to export directly to international buyers. Certified by Fairtrade Labelling Organizations
International (FLO) in 2003, the major aim of Yirgacheffe is to secure better prices for farmers
and access the international coffee market.
With proceeds from the Fair Trade price, the co-op has been able to
• Support eduction. Although Yirgacheffe's entrance into the Fair Trade
market is recent, the cooperative's increased revenue has allowed three
communities to build local schools.
• Improve quality through reinvestment. Most farmers have made
tremendous improvement in coffee quality after securing better prices on
the Fair Trade Market.
• Inspiration for the future. A cooperative member was inspired by the
Fair Trade price he received and promised to use the revenue to buy one
fixed asset, in memory of Fair Trade. Members of Yirgacheffe are planning
to implement health, credit and women's programs.

Tasting Notes:
Light to dark brown with white-beige flecks during grind. Stronger nose aromatics prior to brewing. For us, this translated into more 'woody' and nuts accents, with notes of citrus, chocolate and bitter green. Very attractive and addictive just at that stage.

Once brewed, this roast displayed almost 2 registers; a lower and higher pitch of some kind. There was more natural acidity detected than with Papua New Guinea contributing to a more tightly focused profile. It was less opulent than the Papua New Guinea and it gained in complexity. Notes of bittersweet dark chocolate on one register; accents of citrus and clean astringency in the other register. A winner on all fronts by our book!

We thought of it as a perfect espresso and it brought back to mind the French tradition of having a espresso being served after lunch with a bit of lemon rind on the side.

Just one of our many discriminating customers that frequent the roastery
"Just want to say thank you for the sample of the Java Taman Dadar. Wow, this is an amazing coffee!! The coffee is so smooth and mellow without any hints of bitterness at all. I enjoy the woodsy smokie notes that linger. It is now one of my favorites, I can see myself including a lb with every order. The EL Salvador -- Santa Leticia Estate is another great coffee it has these great grassy notes that accentuate the overall body of the coffee. I also got a lb of decafe and its is amazing how your decafe taste like regular. Thank you for your generous samples and the great coffee"
