Yirgacheffe, Yrgachefe, Yirga Chefe, however you spell it, is a magical coffee Xanadu and arguably Ethiopia's most fabled "region" though it is a smallish town surrounded by some of
the best terroir and growers in the country considered the birthplace of all coffee. This gem comes from the Aricha mill, owned and operated by Cherab na Betesebu and his family,
and the farming excellence of 650 smallholders situated in the mill's vicinity. Their ripe cherries are delivered to the mill station, where they are pre-sorted and disc-pulped,
fermented for 36-48 hours and washed. The wet beans in parchment are placed on raised drying beds in thin layers and turned every 2 to 3 hours during the first few days of the drying process. Depending on weather, the beans are dried for 10 to 12 days until the moisture in the coffee beans is reduced to 11.5 percent. Then the beans are transported to Addis Ababa, Ethiopia's capitol, to be milled and bagged prior to export. Cuppers and graders discerned prominent notes of blueberry, magnolia and assessed a refined, clean cup. We like the honeyed sweetness and mixed summer berry notes
in our cupping and feel this is best in pourover and drip.
