Fans of alternative processing will really love the new Costa Rica Familia (Rodolfo and Gustavo) Monge Black Honey. Fully-ripe Catuai and Caturra varietal cherry is picked and partially pulped at their farm micromill in La Esperanza de Tarrazu, then brought to dry on raised beds. “Black” is the designation for cherries processed with the most possible mucilage left on the beans (there's also “White”, “Yellow” and “Red”, with white being the least amount). The more mucilage, the fruitier the final product. This coffee evinces a broad spectrum of yum, from concord grape to dark chocolate to cinnamon and many other savory notes in between. The Monge farm is 12 hectares and the coffee shrubs are intercropped with various fruit species. They have farmed this terrain outside of San Jose for over 40 years and 5 years ago brought in the micromill to have more process control and microlot traceability. Results have been fantastic and they regularly compete in the Costa Rica Cup of Excellence. This coffee is best experienced in pourover, with a 3:15-4:00 minute total time on 20 gram dose of ground joe.
