Our direct trade partner Traviesa Coffee has for years specialized in finding high-quality microlots all over Colombia, including some of the smaller and lesser-known departments like Risaralda. Finca San Jose, owned by Sr. Gilberto Osorio, is a 26-hectare estate sitting around 1700 meters above sea level in the outlying municipality Santa Rosa de Cabal. These “del origen” coffees ship to my door directly from Colombia via DHL.
“Honey” processing refers to the ripe cherry post-harvesting practice of removing varying amounts of the fruity pulp before drying . Controlling this period of fermentation in this manner requires a delicate balancing act for the producer and can offer a big addition to the flavor profile of a varietal such as Caturra, a higher-yielding and more disease-resistant but less sensorially complex offshoot of Bourbon. Honey processing is relatively rare in Colombia but farms like Finca San Jose, with its emphasis on water conservation and environmental protection, are leading the next generation of forward-thinking coffee production. This is a beautiful and complex, heavy-bodied cup evinces notes of mango, citrus, muscovado sugar; recommended for pourover and drip.

"As far as the coffee(s) the Cerro de Las Ranas is amazing! You are hitting that spot on! It is juicy/full and sweet like hard candy caramel. I like that the roast leaves a bit of brightness/acidity.
