Colombia is a nation of incredible richness and diversity, and its coffee sector, second in size after Brazil, reflects all of it. Producers, like in Ethiopia, tend to be smallholders and likely to prosper in small associations like the Alto San Diego, from whence our excellent Nariño Galeras. This sweet coffee is produced by 18 different farms in Taminango, Nariño Department, who harvest ripe cherry only on their own hectareage and bring it to the nearby Pasto Mill for processing. The varietals are Colombia, Castillo and Caturra, grown between 1750-1950 meters on very steep, rugged terrain. The Mill processing includes a 16-to-18 hour fermentation, drying on patios and in a mechanical silo. The drying process was completed during the first week of August, 2017 and shipped to the ‘States in early September.
I came across this coffee almost by accident. When invited to participate in the 2017 Cascadia Cup Roasters Competition here in Portland a couple weeks ago, all 44 competitors were given 20 lbs. of the same “mystery green coffee” to roast. In my third roast I went for a light-medium roast…the lighter attempts seemed too acidic…of about 12-1/2 minutes to find the sweet spot. It seemed promising, and I submitted the sample for the judging. Turned out my roast won the “People's Choice”award and the coffee was revealed as the Galeras by the provider and one of the sponsors of the event, Genuine Origin. I was happy to be able to produce a goodly amount of it as soon as I found out!
Lovely coffee for drip, and not so bright to be excluded from your espresso machine, as the sugar cane sweetness is predominant, along with notes of orange/citrus and apricots.
