NOTE: All of our premium Arabica coffees are roasted to City+ to Full City roasts, showing minimal-to-no surface oils….we want all of the flavor to stay in the beans until the coffee is ground! Despite the additional descriptors, the first flavor and aroma you'll think of is "COFFEE".

Colombian coffee is a vast landscape..the most Arabica in the producing world…and highly diverse. While long-held, simplistic images of “Juan Valdez” might come to mind when you hear “Colombia”, know that mostly hard-working smallholders define the real “scene” and are as experimental as they are consistently excellent. Loosely referred to as the “Southern Triangle”, the Cauca, Huila and Nariño Departments boast great biodiversity and microclimates and comprise close to 300,000 hectares of coffee production by well over 200,000 individuals. We're following up last season's Nariño Las Galeras “community coffee” (multiple producers/sub-regions) with a fine Cauca from the small municipality of Piendamó. The “community” tag is even more specific here as it references six producers ( Mary Bolaños, Sergio Mosquera, Rodelfi Betancourt, Juan Medina, Dilio Pechene, and Linares Paz) who together with national export partner Banexport share a commitment to best agricultural practices and similar growing profiles.
Three varietals comprise this coffee: Castillo, Colombia and Tabi, grown at between 1650-1720 meters. Only ripe cherry is used in the fully washed process, and solar-dried (canopies protect the raised drying beds). A very balanced, bold and rich drip preparation will reward you with nice aromatics and notes of red apple, caramel and chocolate.
