Sulawesi Toraja Grade 1 washed

The traditional semi-washed method, which predominates in Sumatra especially, presents a level of natural fermentation...read "earthy"...which can mask the fruit notes. This washed Typica (S-795) varietal comes from the central mountain region in the southern part of the Sulawesi Island and is grown at fairly extreme heights for this region, as high as 2000 meters. It is dried to a lower moisture level pre-hulling, and therefore results in a cleaner, brighter and spicier cup. We are roasting it on the lighter sdie of a medium roast to bring out the pop and fruit while maintaining the cardamom and 5-spice powder notes. Body is excellent, and ustifies single origin espresso consideration.
