NOTE: All of our premium Arabica coffees are roasted to City+ to Full City roasts, showing minimal-to-no surface oils….we want all of the flavor to stay in the beans until the coffee is ground! Despite the additional descriptors, the first flavor and aroma you'll think of is "COFFEE".

A richly sweet, hedonistic medley of fruity, spicy, and single origin chocolate deliciousness. Divine, crema-laden dark mahogany mottling ristretti as well as full flavor in milk or soy-based preparations. Stradivarius 'spro is currently featuring a base of pulped natural Brazil Fazenda Esperanca and two of the other best natural and washed coffees in the arsenal. With so many intriguing single origins at my disposal, I consider this espresso blend to be the "laboratory" and bench test each batch rigorously. Roasted to Northern Italian style in small batches for peak expression of flavors, developing intensely in the cup. For the barista set, 201 degrees seems optimal with a 26 second pull using 18 grams of java for a double basket shot.

Portland center of coffee universe for a bit with SCAA show, international connections If Portland appears to be the center of the coffee universe on an average rainy day then the overwhelming presence of the Specialty Coffee Association of America (SCAA) at the Convention Center must be considered Nirvana.  Such an intense assemblage of nearly 10,000 industry professionals, ...more

"...this morning I arose early to grind, press, and sample the El Salvadoran Women's Brew. Wow, what an aromatic and delicious treat! I first noticed a lack of offensive acidity (which is why I did not drink coffee for years), a delicacy and round impression on the palate, wonderful fruitiness, and complex flavors. This coffee reminded me of feminine-style red wines, with understated elegance, finesse, and polish. Some coffees are more about the flavor of roasting, almost a charcoal taste, but this was much more subtle and appealing to me. Tomorrow I will try the Ethiopian selection and let you know what I think. You are definitely on to something special with your coffees. "
