This natural process (fully sun-dried cherry) from the Santa Rita Estate grows at an average altitude of 1500+ meters in the Apaneca-Ilamatepec region, which is renowned for its biodiversity. Principally bourbon varietal but also comprising Catuai and the lesser-known Sarchimor, the Santa Rita natural is known as the “fruit-bomb” on the cupping table of importer Royal Coffee. Very dense layers of Sweet strawberry, dried cherry and butterscotch flavors are all found in this cup, and the low-medium acidity makes it an intriguing SO espresso. We also incorporate it in our Stradivarius Espresso.
