Tiny Costa Rica, paradise for birders, filmmakers, flora and fauna, has it all when it comes to coffee production…stable conditions and a very organized and savvy growing community. Like most Central American countries, Costa Rica relies of washed coffees as its principal tender but a few farms are leaning towards greatly-reduced water consumption with honey and natural (dried in the fruit) process. It will be a while before they can catch up to Ethiopia in the natural process production but we will support their efforts in the meantime! Hacienda Sonora in the Central Valley (Carrillos Altos de Poas, Alajuela) is one such operation eschewing virtually all water, and we offer a limited shot at their natural process microlot of the Piedra Alta varietal, grown at between 1200-1300 meters. The 100 hectare farm relies on its own 100% renewable energy for its shade-grown coffee, including a Pelton wheel turbine which generates electricity from a natural spring.
This light-roasted coffee has terrific taste, body and aromatics…think berries/compote, with whiffs of vanilla and sage. A heady drip/pourover, and excellent pairing with any chocolately dessert.
