Pink Bourbon…who knew? Such an anomaly and scarcity that it seldom becomes available, as only a tiny handful of growers in Colombia have ever seen it or tried to cultivate it actively. It's a spontaneous mutation of Red and Yellow Bourbons, and it's exact origins, geographically, are still not known. It is apparently quite resistant to the devastating Roya fungus which plagued a good portion of Central America as recently as two years ago. Recovery has been promising.
Our nanolot (4 X 35.kg. bags produced) Finca Los Cedros Pink Bourbon refers only to the color of the ripe cherry, which grows on a very modest-sized plot in Pitalito, Huila Department. Farmer Eleodoro Galindez operates the diverse, 10-hectacre farm with his family and workers. The handpicked Pink Bourbon is grown at 1650 meters, Zaranda ecopulped and then sun-dried. Screen size is larger than the fine Yellow and Red Bourbons we've had from Traviesa. Very intense coffee…bright, dense and clean. The lighter roast brings out red apple, caramel, long sweet finish and creamy body. Very special coffee, recommended pourover method, but Chemex quite lovely too.
