This exceptional microlot from Finca La Paz is entirely produced by women outside of the small town, Palestina, in the State of Caldas, in a very prominent coffee-growing region. Varietals represented are Castillo and Colombia and the farm's elevation is about 1600 meters. The production of hand-picked cherry involves water-saving , manual ecopulping and sun-drying the green.
Our favorite preparation for Finca La Paz is drip method, and Hario V60 confirmed importer's notes of sweet fruit, honey, winey, cocoa. Colombia continues to provide the most delightful surprises in the coffee world!
